Cherry Cobbler

Ingredients:

  • 2 cups fresh cherries, pitted
  • ¼ cup plus 1 tablespoon coconut palm sugar, divided
  • ¼ cup pecans, chopped
  • ¼ cup unsweetened coconut, shredded
  • ¼ cup coconut flour
  • 1 tablespoon arrowroot flour
  • ½ teaspoon ground cinnamon
  • Pinch of salt

Directions:

  1. Preheat the oven to 375 degrees F.
  2. In a 7x5-inch baking dish, place the cherries.
  3. Place ¼ cup of coconut sugar over cherries evenly.
  4. Inna bowl, add 1 tablespoon of coconut sugar and remaining ingredients.
  5. Spread pecan mixture over cherries evenly.
  6. Bake for about 20-25 minutes.
  7. Remove from oven and keep aside to cool slightly.
  8. Serve warm.
