Ingredients:
1 cup black beans (cooked)
1 cup chickpeas (cooked)
1 avocado (diced)
¼ cup almonds (chopped)
½ cup pumpkin seeds
2 cups baby spinach
1 tablespoon olive oil
1 lemon (juiced and zested)
1 tablespoon Italian salad dressing (reduced fat)
Salt as needed
Black pepper as needed
Directions:
- Toss together all of the ingredients except for the avocado. Season with salt and black pepper and mix well until fully coated.
- Add avocado and take care not to mush. Serve and enjoy.
