Ingredients:

1 cup black beans (cooked)

1 cup chickpeas (cooked)

1 avocado (diced)

¼ cup almonds (chopped)

½ cup pumpkin seeds

2 cups baby spinach

1 tablespoon olive oil

1 lemon (juiced and zested)

1 tablespoon Italian salad dressing (reduced fat)

Salt as needed

Black pepper as needed

Directions:

  1. Toss together all of the ingredients except for the avocado. Season with salt and black pepper and mix well until fully coated.
  2. Add avocado and take care not to mush. Serve and enjoy.
