Fresh Salad with Wheat Germ Oil Dressing

  1. 2 cups of baby spinach

  2. 1 avocado (diced)

  3. 1 sweet potato (cubed)

  4. 1 tablespoon wheat germ oil

  5. ½ cup snow peas

  6. ¼ lb boneless chicken breast (diced)

  7. 1 tablespoon dijon mustard

  8. 1 tablespoon lemon juice

  9. ¼ cup sunflower seeds

  10. Salt as needed

  11. Black pepper as needed

  12. ½ teaspoon garlic powder

  13. 1 garlic clove (minced)

  14. ¼ teaspoon ground ginger

  15. 1 red apple (diced)

  16. 1 tablespoon olive oil


  1. Heat olive oil in a frying pan and add chicken chunks. Saute for 2 to 3 minutes then add garlic mince and again saute for few more seconds until aromatic. Season with salt and black pepper and remove from heat when cooked.
  2. Now boil water and add sweet potato. Cook for 6 to 7 minutes until the potatoes are tender. Drain out the water and set the potatoes in a colander to get rid of excessive water.
  3. Make salad dressing by mixing together wheat germ oil, garlic powder, ground ginger, salt, black pepper, dijon mustard, lemon juice and sunflower seeds until smooth paste is formed.
  4. Mix together the snow peas, sweet potatoes, avocado, spinach, apple and chicken cubes and stir the dressing all over the salad. Toss well and serve immediately.
