Ingredients:

  • 2 cups of cooked soybean
  • 1 medium yellow onion (finely chopped)
  • 1 medium tomato (finely chopped)
  • 1 green bell pepper (finely chopped)
  • 3 white mushrooms (finely chopped)
  • ¼ cup black olives (sliced)
  • 1 tablespoon freshly chopped basil
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon Italian salad dressing
  • ½ tablespoon dijon mustard
  • Salt as needed
  • Black pepper as needed

Directions:

  1. Add of the ingredients in a large bowl and toss well to coat. Garnish with fresh cilantro and enjoy immediately.
