Meatballs in Tomato Gravy

Ingredients:
For Meatballs:
- 1 pound lean ground turkey
- 1 organic egg, beaten
- 1 tablespoon fresh ginger, minced
- 1 garlic clove, minced
- 2 tablespoons fresh cilantro, chopped finely
- 2 tablespoons tomato paste
- 1/3 cup almond meal
- 1 tablespoon ground cumin
- Pinch of ground cinnamon
- Salt and freshly ground black pepper, to taste
- 2 tablespoons coconut oil
For Tomato Gravy:
- 2 tablespoons coconut oil
- ½ of small onion, chopped
- 2 garlic cloves, chopped
- 1 teaspoon fresh lemon zest, grated finely
- 2 cups tomatoes, chopped finely
- Pinch of ground cinnamon
- 1 teaspoon red pepper flakes, crushed
- ¾ cup bone broth
- Salt and freshly ground black pepper, to taste
- ¼ cup fresh parsley, chopped
Directions:
- For meatballs in a large bowl, add all ingredients except oil and mix until well combined.
- Make about 1-inch sized balls from mixture.
- In a large skillet, melt coconut oil over medium heat and cook meatballs for about 3-5 minutes or until golden brown from all sides.
- Transfer the meatballs into a bowl.
- For gravy in a large pan, melt coconut oil over medium heat and sauté onion and garlic for about 4 minutes.
- Add lemon zest, tomatoes, cinnamon, red pepper flakes and broth and simmer for about 7 minutes.
- Stir in salt, black pepper and meatballs and reduce the heat to medium-low.
- Simmer for about 20 minutes.
- Serve hot with the garnishing of parsley.
