Stuffed Apples

Ingredients:

  • 4 large apples, cored
  • 2 teaspoons fresh lemon juice
  • 1 cup fresh blueberries
  • ½ cup fresh apple juice
  • ½ teaspoon ground cinnamon
  • ¼ cup almond meal
  • ¼ cup coconut flakes

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Coat the apples with lemon juice evenly.
  3. Arrange the apples in a baking dish.
  4. Stuff each apple with blueberries.
  5. Scatter the remaining blueberries around the apples.
  6. Drizzle with apple juice.
  7. Sprinkle each apple with cinnamon evenly.
  8. Top with almond meal and coconut flakes evenly.
  9. Bake for about 30-35 minutes.
  10. Serve warm.
