Tofu Scramble

Ingredients:

  • 1½ pounds firm tofu
  • 2 teaspoons sesame oil, toasted
  • 2 teaspoons olive oil
  • ½ cup red onion, chopped
  • 1 medium tomato, chopped
  • 2 cups fresh spinach, chopped
  • 3 tablespoons chives, chopped
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce
  • 1/8 teaspoon salt
  • ¼ teaspoon ground black pepper

Directions:

  1. In a bowl, add tofu and mashed into smaller pieces.
  2. In a large non-stick pan, heat both oils over medium-high heat and sauté onion for about 4-5 minutes.
  3. Add tomato and cook for about 1-2 minutes.
  4. Add the tofu and stir to combine well.
  5. Stir in remaining ingredients and cook for about 2-3 minutes.
  6. Serve warm.
